Strawberry Quinoa Salad Mason Jar Meal



We know it is difficult to eat healthy while you are grieving. 
Leafy greens fight inflammation in the body. 

4 servings - tips for Mason jar meals - always put the dressing at the bottom - use a pint-sized jar - salad will keep 3 to 5 days

Ingredients:
2/3 cup uncooked quinoa
6  cups fresh spinach
2 cups sliced strawberries
½ cup crumbled feta (or any cheese you like)
¼ cup red onion
2 large chicken breasts, cooked and chopped
¼ cup white wine vinegar
¼ cup olive oil
1 TBSP honey
2 tsp poppy seeds
½ tsp Dijon mustard
Salt and pepper to taste

Instructions:

Cook quinoa to package directions; let cool completely

For dressing: whisk white wine vinegar, olive oil, honey, poppy seeds and Dijon mustard. Divide dressing among 4 jars.

Layer remaining ingredients in the following order: chicken, quinoa, strawberries, feta, red onion, and spinach.

To eat, pour into a bowl and stir to disperse dressing.
